Method

Grilling the Veal Chops

    Prepare the Veal Chops

    Season the veal chops with salt and black pepper. Let them sit at room temperature for about 30 minutes.

    Grill the Chops

    Preheat the grill to medium-high heat. Brush the grill with olive oil. Grill the veal chops for about 5-7 minutes on each side, or until they reach an internal temperature of 145°F (medium rare). Remove from grill and let rest.

Making the Brandy-Apple Demi

    Sauté Shallots

    In a saucepan, melt butter over medium heat. Add minced shallots and sauté until translucent.

    Deglaze with Brandy

    Pour in brandy and apple cider, scraping the bottom of the pan. Let it reduce by half.

    Add Stock

    Stir in chicken stock, and season with salt and black pepper. Simmer until thickened, about 10 minutes.

Braised Napa Cabbage

    Sauté Garlic

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

    Cook Cabbage

    Add chopped napa cabbage and vegetable broth. Season with salt and black pepper. Cover and simmer for about 20 minutes until tender.

Making Potato Cake

    Prepare Potatoes

    Boil cubed potatoes in salted water until tender, about 15 minutes. Drain and mash.

    Mix Ingredients

    In a bowl, combine mashed potatoes, cheddar cheese, crumbled bacon, chopped chives, eggs, flour, salt, and black pepper. Mix until well combined.

    Cook Potato Cake

    In a skillet, melt butter over medium heat. Pour in the potato mixture, flattening it with a spatula. Cook for about 5-7 minutes on each side until golden brown.
