Grilled Salmon with Balsamic Mustard Glaze

    Prepare the Balsamic Mustard Glaze

    In a small saucepan, combine balsamic vinegar, Dijon mustard, honey, olive oil, salt, and black pepper. Simmer over medium heat until slightly thickened, about 5-7 minutes. Remove from heat and set aside.

    Prepare the Crème Fraiche Mashed Potatoes

    Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add crème fraîche, butter, salt, and pepper to taste. Mash until smooth and creamy.

    Grill the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper. Place the salmon on the grill, skin-side down, and cook for about 5-6 minutes. Flip and brush with the balsamic mustard glaze, cooking for another 4-5 minutes until cooked through.

    Prepare the French Green Beans

    While the salmon is grilling, steam or blanch the French green beans until tender, about 5 minutes. Season with salt and a drizzle of olive oil if desired.

    Serve

    Plate the grilled salmon alongside a generous serving of crème fraîche mashed potatoes and the French green beans. Drizzle any remaining balsamic mustard glaze over the salmon.
