Preparation

    Prepare the Dijon Horseradish Butter

    In a mixing bowl, combine softened unsalted butter, Dijon mustard, prepared horseradish, and chopped parsley. Mix until well combined and smooth. Place on a piece of parchment paper, roll into a log, and refrigerate until firm.

    Make the Crème Fraiche Mashed Potatoes

    Boil peeled and cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot. Add crème fraîche, butter, salt, and pepper. Mash until desired consistency is reached.

    Prepare the French Green Beans

    Blanch green beans in boiling water for 3-4 minutes, then shock in ice water. In a skillet over medium heat, melt butter, add minced garlic, and sauté for 1 minute. Add green beans, season with salt and pepper, and toss to combine.

Grilling the Filet Mignon

    Grill the Steak

    Preheat grill to high heat. Season filet mignon steaks with salt, black pepper, and olive oil. Grill for about 4-5 minutes per side for medium-rare, adjusting time according to your preference. Remove from grill and let rest for 5 minutes.
