    Prepare the Onions

    Slice the onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Add Garlic and Wine

    Stir in the minced garlic and cook for an additional 1-2 minutes. Pour in the white wine, scraping the bottom of the pot to deglaze, and let it simmer for about 5 minutes.

    Add Broth and Seasoning

    Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for at least 30 minutes.

    Prepare Crostini

    While the soup is simmering, prepare the crostini by slicing a baguette into 1/2 inch slices. Brush both sides with olive oil and toast them in the oven at 375°F (190°C) until golden brown, about 10-15 minutes.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into bowls, top with the toasted baguette slices, and sprinkle generously with grated Emmentaler cheese. Place the bowls under a broiler for a few minutes until the cheese is melted and bubbly.
