Crispy Brussels Sprouts

Method

Preparation

  1. 1

    Prepare the Brussels Sprouts

Preheat the oven to 425°F (220°C). Trim the ends of the Brussels sprouts and cut them in half. Toss them in a bowl with olive oil, salt, and black pepper.

  2. 2

    Roast the Brussels Sprouts

Spread the Brussels sprouts on a baking sheet in a single layer. Roast for 20-25 minutes until crispy and golden brown, tossing halfway through.

  3. 3

    Cook the Bacon

While the Brussels sprouts are roasting, cook the bacon in a skillet over medium heat until crispy. Remove and let drain on paper towels. Once cool, crumble into pieces.

  4. 4

    Fry the Leeks

In the same skillet, add the sliced leeks and fry until golden and crispy. Remove and let drain on paper towels.

  5. 5

    Make the Honey-Chili Aïoli

In a small bowl, combine the mayonnaise, honey, chili paste, and finely chopped preserved lemon. Mix well to incorporate.
