Preparation and Cooking

    Prepare the Artichokes

    If using canned artichoke hearts, drain and rinse them under cold water. If using frozen, thaw and dry them thoroughly.

    Make the Breading

    In a bowl, mix together flour, cornstarch, salt, black pepper, garlic powder, and herbs de Provence.

    Coat the Artichokes

    Dredge each artichoke heart in the flour mixture, ensuring they are well coated. Shake off excess flour.

    Heat the Oil

    In a deep skillet or pot, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

    Fry the Artichokes

    Carefully add coated artichokes to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.

    Prepare the Balsamic Mustard Glaze

    In a small bowl, whisk together balsamic vinegar, Dijon mustard, and honey until well combined.
