    Prepare the Beef Stew

    In a large pot, heat the olive oil over medium-high heat. Season the beef tenderloin with salt and black pepper, then sear it on all sides until browned. Remove the beef and set it aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables soften.

    Deglaze and Simmer

    Pour in the stout beer and scrape the bottom of the pot to deglaze. Add the beef broth and thyme, then return the beef to the pot. Bring to a simmer, cover, and let it cook for about 1.5 to 2 hours until the beef is tender.

    Make Mashed Potatoes

    While the stew is cooking, boil the chopped potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add the butter and crème fraîche, then mash until smooth and creamy. Season with salt to taste.

    Finish the Stew

    Once the beef is tender, remove it from the pot and slice it. Return it to the pot to warm through. Adjust seasoning if necessary.

    Serve

    Serve the beef stew hot over a scoop of crème fraîche mashed potatoes, garnished with crispy thyme.
