Caramelize the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the thinly sliced onion and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are soft and caramelized. Set aside.

Cook the Bacon
In the same skillet, add the applewood smoked bacon slices and cook until crispy. Remove and drain on paper towels. Once cooled, crumble the bacon.

Prepare Honey Whipped Chèvre
In a mixing bowl, combine the softened chèvre cheese and honey. Mix until smooth and well combined.

Assemble the Flatbread
Preheat the oven to 400°F (200°C). On a baking sheet, place the flatbreads. Spread the honey whipped chèvre evenly over each flatbread. Top with caramelized onions, crumbled bacon, sliced figs, and shredded Emmentaler cheese.

Bake the Flatbread
Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and the edges are golden.

Prepare Provençale Pistou
In a food processor, combine fresh basil, remaining olive oil, and a pinch of salt. Blend until smooth. Adjust seasoning to taste.

Serve
Once the flatbreads are out of the oven, drizzle with Provençale pistou. Slice and serve warm.
