Preparation Steps

    Make the Crust

    Preheat the oven to 350°F (175°C). In a bowl, mix almond flour, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10-12 minutes until lightly golden. Let cool.

    Prepare the Cheesecake Filling

    In a large mixing bowl, beat softened cream cheese with 1 cup of sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Pour the filling over the cooled crust.

    Bake the Cheesecake

    Bake the cheesecake at 325°F (160°C) for 50-60 minutes or until the center is set. Turn off the oven and let it cool in the oven with the door ajar for 1 hour. Refrigerate for at least 4 hours or preferably overnight.

    Prepare the Blackberry Compote

    In a saucepan over medium heat, combine blackberries, 1/4 cup sugar, and lemon juice. Cook, stirring gently, until the mixture is bubbly and the berries break down, about 10-15 minutes. Let cool.

    Make the Vanilla Ice Cream

    In a bowl, whisk together the egg yolks and sugar until light and fluffy. In a saucepan, heat the heavy cream and bring to a simmer. Gradually whisk the hot cream into the egg mixture. Return to the saucepan and cook over low heat until thickened. Stir in vanilla extract. Chill the mixture and churn in an ice cream maker according to manufacturer’s instructions.

    Slice the chilled cheesecake and serve topped with blackberry compote and a scoop of housemade vanilla ice cream.
