    Rub the mixture thoroughly over the pork belly, ensuring all surfaces are well coated.

    Wrapping and Refrigerating

    Wrap the pork belly tightly in plastic wrap and place it in a dish to catch any juices. Refrigerate for at least 7 days, flipping the pork belly every other day.

    Rinsing and Drying

    After 7 days, remove the pork belly from the refrigerator, rinse off the cure under cold water, and pat it dry with paper towels.

    For a smoky flavor, you can either smoke the pork belly using a smoker or bake it at 200°F (93°C) until the internal temperature reaches 150°F (65°C). This will take about 2 to 3 hours.
