Preparation Steps
- 1
Curing the Pork Belly
In a large mixing bowl, combine the salt, brown sugar, black pepper, garlic powder, and smoked paprika. If you're using maple syrup or honey, mix that in as well.
- 2
Applying the Cure
Rub the mixture thoroughly over the pork belly, ensuring all surfaces are well coated.
- 3
Wrapping and Refrigerating
Wrap the pork belly tightly in plastic wrap and place it in a dish to catch any juices. Refrigerate for at least 7 days, flipping the pork belly every other day.
- 4
Rinsing and Drying
After 7 days, remove the pork belly from the refrigerator, rinse off the cure under cold water, and pat it dry with paper towels.
- 5
Smoking or Baking (Optional)
For a smoky flavor, you can either smoke the pork belly using a smoker or bake it at 200°F (93°C) until the internal temperature reaches 150°F (65°C). This will take about 2 to 3 hours.
- 6
Slicing and Storing
Once cooked, allow the bacon to cool before slicing it into strips. Store the bacon in the refrigerator for up to 1 week or freeze for longer storage.
