Crust Preparation

Preheat the Oven

Preheat your oven to 350°F (175°C).

Mix the Crust Ingredients

In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust

Bake in the preheated oven for 10 minutes, then remove and let it cool while you prepare the filling.

Beat the Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Sour Cream

Gradually add the granulated sugar and mix until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

Incorporate Eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Add Flour

Finally, add the all-purpose flour and mix until just incorporated, scraping down the sides of the bowl as necessary.

Pour and Bake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake for 50-60 minutes or until the center is set but still slightly jiggly.

Cooling and Serving

Cool the Cheesecake

Once baked, turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. This helps to prevent cracks.

Chill in the Refrigerator

Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

Prepare the Topping

If using, prepare the topping by slicing fresh strawberries and having the strawberry sauce ready.

Once chilled, remove the cheesecake from the springform pan, slice, and serve with fresh strawberries and strawberry sauce on top if desired.
