1. Grate the Zucchini and Squash

Using a box grater or food processor, grate the zucchini and yellow squash into a large bowl. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.

2. Chop Fresh Chives

Finely chop the fresh chives and set aside.

Batter Preparation

3. Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, baking powder, salt, black pepper, and garlic powder until well mixed.

4. Mix Wet Ingredients

In another bowl, whisk the eggs and milk together until blended.

5. Combine All Ingredients

Add the grated zucchini, yellow squash, chives, and the wet ingredient mixture to the dry mixture. Stir until just combined; do not overmix.

Cooking Pancakes

6. Heat the Pan

In a large skillet or frying pan, heat the olive oil over medium heat until shimmering.

7. Cook the Pancakes

Scoop about 1/4 cup of the batter for each pancake onto the skillet. Cook for 3-4 minutes on each side, or until golden brown and cooked through.

8. Repeat and Serve

Continue to cook the remaining batter, adding more olive oil to the pan as needed. Serve warm with your favorite toppings.
