Fries Preparation

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips to create hand-cut fries, approximately 1/2 inch wide.

    Soak the Potatoes

    Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Carefully add the dried potatoes to the hot oil in batches, frying for about 5-6 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with salt to taste.

Padron Mayo Preparation

    Prepare the Padron Peppers

    Wash and dry the padron peppers. Remove the stems and seeds if desired, but leaving the seeds can add a bit of heat.

    Blend the Mayo

    In a food processor, combine the padron peppers, mayonnaise, garlic, lemon juice, and salt. Blend until smooth and creamy.

    Taste and Adjust

    Taste the padron mayo and adjust seasoning if necessary. You can add more lemon juice or salt according to your preference.
