Making the Beef Tartare
Finely chop the beef filet mignon and place it in a bowl. Add the egg yolk, Dijon mustard, chopped capers, Worcestershire sauce, salt, black pepper, and parsley. Mix gently to combine and adjust seasoning to taste.

Making the Onion Jam
In a pan over medium heat, add a little oil and the sliced onions. Cook until soft and translucent, about 10 minutes. Stir in the brown sugar and balsamic vinegar, and continue to cook until the onions are caramelized and jam-like, about 15 more minutes. Add a pinch of salt and set aside.

Preparing Matchstick Potatoes
Soak the matchstick potatoes in cold water for 30 minutes, then drain and dry. Heat oil in a deep fryer or large pot and fry the potatoes until golden and crispy. Drain on paper towels and season with salt and truffle oil while still hot.
