Preparation of the Lamb

Sear the Lamb
Season the rack of lamb with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the lamb on all sides until browned, about 4-5 minutes.

Roast the Lamb
Preheat the oven to 400°F (200°C). Place the lamb in a roasting pan and roast for about 20-25 minutes for medium-rare, or until the desired doneness is achieved. Use a meat thermometer to check for an internal temperature of 135°F (57°C).

Rest the Lamb
Remove the lamb from the oven and allow it to rest for 10 minutes before slicing.

Spread the vegetables on a baking sheet and roast in the oven for about 15-20 minutes, until tender and slightly caramelized.
