    Sear the Short Ribs

    Heat olive oil in a large Dutch oven over medium-high heat. Season the short ribs with salt and pepper, then sear them on all sides until browned. Remove from pot and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onions, carrots, celery, and garlic. Cook for about 5-7 minutes until softened.

    Deglaze the Pot

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer.

    Add Remaining Ingredients

    Return the short ribs to the pot along with beef broth, bay leaves, and thyme. Bring to a simmer.

    Braise the Ribs

    Cover the pot and transfer to a preheated oven at 325°F (163°C). Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.

    Finish and Serve

    Remove the pot from the oven. Discard bay leaves and skim off excess fat from the surface. Serve the short ribs with the sauce and vegetables.
