    Season the beef sirloin with salt and black pepper. Heat a skillet over medium-high heat and add olive oil. Sear the beef on all sides until browned, about 3-4 minutes per side for medium-rare. Remove from skillet and let rest.

    Make the Chouriço Sauce

    In the same skillet, add chopped onion and minced garlic. Sauté until translucent. Add sliced chouriço and red bell pepper, cooking for about 5 minutes. Stir in paprika and cook for an additional minute.

    In a small pot, heat olive oil over low heat. Carefully add the eggs, ensuring they are submerged in the oil. Poach the eggs for about 20 minutes until the whites are set but the yolks remain runny.

    Combine and Serve

    Slice the rested beef sirloin and place on a plate. Spoon the chouriço sauce over the top. Carefully place a poached egg on each serving. Drizzle with additional olive oil if desired.
