    Prepare the Codfish

    Soak the salted codfish in water for 24 hours, changing the water several times to remove excess salt. After soaking, drain and shred the codfish into small pieces.

    Cook the Potatoes

    Peel and slice the potatoes into thin matchsticks. Heat a pan with olive oil and fry the potato sticks until golden and crispy. Remove and drain on paper towels.

    Sauté Onion and Garlic

    In the same pan, add more olive oil if needed and sauté the chopped onion and minced garlic until translucent.

    Combine Ingredients

    Add the shredded codfish to the onion and garlic mixture. Cook for about 5-7 minutes until heated through. Stir in the fried potato sticks.

    Finish with Egg Yolks

    Remove the pan from heat and quickly stir in the egg yolks until well combined, creating a creamy texture.

    Garnish

    Chop the black olives and parsley, and sprinkle them over the codfish mixture. Season with salt and black pepper to taste.
