    Make the Dough

    In a large bowl, mix the flour and salt together. Make a well in the center, then add the egg and water. Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a cloth and let it rest for 30 minutes.

    Prepare the Filling

    Boil the potatoes until tender, about 15 minutes. Drain and mash them in a bowl. In a skillet, melt butter and sauté the chopped onion until translucent. Add the sautéed onion, cheddar cheese, and black pepper to the mashed potatoes. Mix well and let it cool.

    Assemble the Pierogi

    Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles using a round cutter. Place a tablespoon of filling on one half of each circle. Fold over and seal the edges, pressing with a fork to ensure they're closed tightly.

    Cook the Pierogi

    Bring a large pot of salted water to a boil. Drop the pierogi in batches and cook for 4-5 minutes or until they float to the surface. Remove with a slotted spoon and drain.
