Prepare the Strawberries
Wash the strawberries, hull them, and slice them. In a bowl, combine the sliced strawberries with 1 tablespoon of granulated sugar and let them sit for about 30 minutes to macerate.

Make the Shortcake
Preheat your oven to 425°F (220°C). In a large bowl, whisk together the flour, 1 tablespoon of sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the heavy cream until just combined.

Bake
Turn the dough onto a floured surface and gently knead it a few times. Pat into a 1-inch thick round and cut into 8 wedges. Place on a baking sheet and bake for 15-20 minutes or until golden brown.

Make the Whipped Cream
In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Assemble the Shortcake
Once the shortcakes are baked and cooled slightly, slice them in half. Layer the bottom half with strawberries, add a generous amount of whipped cream, and top with the other half of the shortcake. Serve immediately.
