    Prepare the Shrimp

    In a bowl, combine flour, cornmeal, and Cajun seasoning. In another bowl, whisk together eggs and milk.

    Coat the Shrimp

    Dip each shrimp into the egg mixture, then dredge in the flour mixture until well-coated.

    Fry the Shrimp

    Heat vegetable oil in a large skillet over medium-high heat. Fry the shrimp in batches for about 2-3 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the PoBoy

    Slice the French bread or hoagie rolls and spread tartar sauce on both sides. Layer with shredded lettuce, sliced tomatoes, and a generous portion of fried shrimp.

    Serve

    Serve immediately, with extra tartar sauce on the side if desired.
