Cobblers

Method

Preparation

  1. 1

    Prepare the Fruit Filling

In a large bowl, combine the fresh or frozen fruit, 1/4 cup of sugar, and ground cinnamon. Toss gently to coat the fruit with the mixture. Set aside to let it marinate for about 15 minutes.

  2. 2

    Make the Dough

In another bowl, whisk together the flour, remaining sugar, and baking powder. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.

  3. 3

    Assemble the Cobbler

Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish. Spread half of the dough mixture in the bottom of the prepared dish. Layer the marinated fruit on top of the dough, then dollop the remaining dough over the fruit.

  4. 4

    Bake

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the fruit is bubbling.

  5. 5

    Serve

Allow the cobbler to cool slightly before serving warm with a scoop of vanilla ice cream on top.
