    Prepare the Catfish

    Clean the whole catfish thoroughly under cold water to remove any impurities. Pat dry with paper towels.

    Make the Coating

    In a large bowl, mix together cornmeal, flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.

    Coat the Catfish

    Dredge each catfish in the cornmeal mixture, ensuring it is completely covered. Shake off any excess coating.

    Heat the Oil

    In a large, deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Catfish

    Carefully place the coated catfish in the hot oil, frying in batches if necessary. Fry for about 5-7 minutes on each side, or until golden brown and cooked through.

    Drain and Serve

    Remove the fried catfish and place on a paper towel-lined plate to drain excess oil. Serve hot on a platter.
