    Sear the Beef

    In a large skillet, heat the olive oil over medium-high heat. Add the beef sirloin tips and sear until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

    Make the Gravy

    Pour in the beef broth and Worcestershire sauce. Stir to combine, scraping up any brown bits from the bottom of the skillet. Bring the mixture to a simmer.

    Thicken the Gravy

    In a small bowl, mix the cornstarch and water to create a slurry. Slowly add this mixture to the simmering gravy while stirring continuously until it thickens, about 2-3 minutes.

    Combine Beef and Gravy

    Return the seared beef tips to the skillet. Season with salt and black pepper. Simmer for another 5 minutes to heat through.

    Serve the beef tips and gravy over mashed potatoes or fluffy white rice.
