Prepare the Meat

Cut the White Tail meat into strips or chunks and season with salt, black pepper, and cayenne pepper.

Set Up Breading Station

In one bowl, place the all-purpose flour. In another bowl, whisk together the eggs and milk. In a third bowl, combine cornmeal with a pinch of salt.

Bread the Meat

Dredge the seasoned meat in flour, then dip it in the egg mixture, and finally coat it with cornmeal.

Heat Oil

In a large skillet, heat vegetable oil over medium-high heat until hot.

Fry the Meat

Carefully add the breaded meat to the hot oil and fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Assemble the Po' Boys

Slice the French rolls or baguette lengthwise. Spread a generous amount of remoulade sauce on the bottom half, add lettuce, tomato slices, and the fried White Tail meat. Top with more remoulade sauce and close the sandwich.

Serve

Cut the Po' Boys in half and serve immediately with extra remoulade sauce on the side.
