Prepare the Catfish

In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes in the refrigerator.

Mix the Dry Ingredients

In a separate bowl, combine cornmeal, flour, cajun seasoning, salt, and black pepper.

Coat the Catfish

Remove catfish from buttermilk, letting excess drip off. Dredge each fillet in the cornmeal mixture, coating well.

Fry the Catfish

Heat vegetable oil in a deep skillet over medium-high heat. Fry catfish fillets for about 4-5 minutes on each side or until golden brown and cooked through. Drain on paper towels.

Assemble the Po' Boys

Slice the French bread loaves in half. Layer shredded lettuce, sliced tomatoes, and pickles on the bottom half. Add fried catfish fillets and drizzle with remoulade sauce. Top with the other half of the bread.

Serve

Cut the Po' Boys in half and serve immediately with extra remoulade on the side.
