Make the Pie Crust

In a large mixing bowl, combine the flour, salt, and granulated sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.

Prepare the Apple Filling

In another bowl, toss together the sliced apples, brown sugar, cinnamon, nutmeg, and lemon juice until well combined. Set aside.

Assemble the Pies

Preheat the oven to 425°F (220°C). Roll out one disc of dough on a floured surface to fit your pie pan. Place the dough in the pan and fill with the apple mixture. Roll out the second disc of dough, place it over the filling, and seal the edges. Cut slits in the top crust to allow steam to escape.

Bake the Pies

Brush the top crust with the beaten egg for a golden finish. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the apples are tender.

Add Toppings

Once baked, remove the pies from the oven and let them cool slightly. Drizzle with caramel sauce and dust with powdered sugar before serving.
