Prepare the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels. Place the wings in a large mixing bowl.

Season the Wings
Drizzle the olive oil over the chicken wings. In a small bowl, combine salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Sprinkle the seasoning mixture over the wings and toss to ensure they are evenly coated.

Preheat the Smoker
Prepare your smoker by preheating it to 225°F (107°C). Add your choice of wood chips for smoking (hickory or applewood work well).

Smoke the Wings
Place the seasoned wings on the smoker rack, ensuring they are not touching each other. Close the lid and smoke the wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C) and the skin is crispy.

If desired, toss the smoked wings in buffalo sauce or serve with ranch dressing on the side.
