Prepare the Chicken

Rinse the whole chicken under cold water and pat it dry with paper towels. This will help the skin become crispy when smoked.

Season the Chicken

Rub the entire chicken with olive oil, ensuring that it is coated evenly. Season the chicken generously with salt, black pepper, garlic powder, and paprika, making sure to get the seasoning under the skin and inside the cavity.

Prepare the Smoker

Soak the smoked wood chips in water for at least 30 minutes before starting. This will help them produce smoke instead of burning up quickly. Preheat your smoker to 250°F (121°C).

Smoke the Chicken

Place the soaked wood chips in the smoker box or directly on the coals if using a charcoal smoker. Once the smoker is ready, place the seasoned chicken on the grill grate, breast side up. Close the lid and smoke the chicken for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

Rest the Chicken

Once the chicken is fully cooked, remove it from the smoker and let it rest for at least 15-20 minutes before carving. This allows the juices to redistribute throughout the meat.
