Prepare the Ribs
Remove the silver skin from the back of the ribs for better flavor absorption and tenderness.

Apply Mustard
Coat the ribs evenly with yellow mustard. This will help the dry rub adhere better.

Mix the Dry Rub
In a bowl, combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper. Mix well.

Apply Dry Rub
Generously rub the mixture all over the ribs, ensuring to cover all areas. Let the ribs sit for at least 30 minutes to absorb the flavors.
Smoking

Prepare the Smoker
Preheat your smoker to 225°F (107°C). Soak the wood chips in water for about 30 minutes, then drain.

Smoke the Ribs
Place the ribs in the smoker bone-side down, add the soaked wood chips to the smoker box, and smoke for about 5-6 hours, maintaining a temperature of 225°F (107°C).

Spritz with Vinegar
Every hour, spritz the ribs with apple cider vinegar to keep them moist and enhance flavor.

In the last 30 minutes of smoking, you can brush the ribs with barbecue sauce if desired.
