Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks for easier cooking.

Make the Rub
In a small bowl, combine paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well.

Rub the Pork
Generously rub the spice mixture all over the pork pieces, ensuring they are well coated.

Cook the Pork
Place the seasoned pork in a slow cooker. Pour in the apple cider vinegar and water. Cover and cook on low for 8 hours, or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the cooker and mix with BBQ sauce.

Serve the pulled pork on buns or on its own with a side of coleslaw.

Prepare the Vegetables
In a large bowl, combine the shredded cabbage and grated carrot.

Make the Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine and Chill
Pour the dressing over the cabbage and carrot mixture. Toss well to combine. Cover and refrigerate for at least 30 minutes before serving.

Serve the coleslaw alongside the pulled pork.
