Preparing the Pork Belly

Preheat your oven to 300°F (150°C).

Season the Pork Belly
Rub the pork belly with salt, black pepper, garlic powder, and onion powder until evenly coated.

Place the seasoned pork belly on a baking tray lined with parchment paper and bake in the preheated oven for 2 to 2.5 hours, or until the meat is tender and the fat has rendered.

Remove the pork belly from the oven and let it cool for 15 minutes before cutting it into bite-sized pieces.

In a saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, mustard, garlic powder, black pepper, and salt.

Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for about 15 minutes or until it thickens slightly.

For a smoother sauce, use an immersion blender to puree the mixture until desired consistency is reached.
