Potatoes

Method

Preparation of Potatoes

  1. 1

    Wash and Peel Potatoes

Begin by washing the Russet potatoes thoroughly under cold water to remove any dirt. After washing, peel the potatoes using a vegetable peeler.

  2. 2

    Cut into Strips

Once peeled, cut the potatoes into even strips, about 1/4 inch thick. This will ensure even cooking when frying.

  3. 3

    Soak in Water

Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes them crispier when fried.

Frying

  1. 4

    Preheat the Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil's readiness by dropping in a small piece of potato; if it sizzles, the oil is ready.

  2. 5

    Dry the Potatoes

After soaking the potatoes, drain them and pat them dry using paper towels. Ensure they are as dry as possible to prevent oil splattering.

  3. 6

    Fry in Batches

Carefully add a handful of potato strips to the hot oil, ensuring not to overcrowd the pot. Fry for about 5-7 minutes or until the fries are golden brown and crispy.

  4. 7

    Drain and Season

Using a slotted spoon, remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle with salt, garlic powder, and paprika to taste.
