Prepare Hawga Changa

    Cook the Filling

    In a skillet, heat vegetable oil over medium heat. Add chopped onions and bell peppers, sauté until softened, about 5 minutes. Add minced garlic, cook for another minute. Add ground beef, cook until browned. Drain excess fat.

    Season the Filling

    Stir in cumin, chili powder, salt, and black pepper. Cook for an additional 2-3 minutes until spices are fragrant.

    Assemble the Changa

    Place a tortilla on a flat surface. Add a portion of the beef mixture and a sprinkle of shredded cheese. Fold the tortilla over to create a pocket and press down to seal. Repeat with remaining tortillas.

    Cook the Changa

    In a clean skillet, heat a little oil over medium heat. Cook each changa for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Make Yukgaejang

    Prepare the Broth

    In a large pot, add beef and water. Bring to a boil over medium-high heat. Reduce heat to low and simmer for about 1.5 hours until beef is tender.

    Shred the Beef

    Remove the beef from the pot, shred it using two forks, and set aside. Strain the broth to remove impurities and return it to the pot.

    Add Vegetables and Seasoning

    To the strained broth, add scallions, minced garlic, gochugaru, soy sauce, sesame oil, salt, and black pepper. Bring to a simmer.

    Finish with Bean Sprouts

    Add shredded beef back to the pot along with bean sprouts. Simmer for an additional 10 minutes until everything is heated through.
