Preparing the French Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips about 1/4 inch thick.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, which helps in achieving crispiness.

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches. Fry for about 5-7 minutes or until they turn golden brown.

    Drain and Season

    Remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, season with salt and black pepper to taste.

    In a medium bowl, combine the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper.

    Taste the barbecue sauce and adjust seasoning if necessary. Add more vinegar for tanginess or sugar for sweetness.
