Prepare the Chicken
Rinse the whole chicken under cold water and pat it dry with paper towels. Place it in a large bowl or on a cutting board.

Make the Rub
In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, brown sugar, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Apply Olive Oil
Drizzle the olive oil over the chicken, rubbing it evenly over the surface to help the rub adhere.

Season the Chicken
Generously apply the spice rub all over the chicken, including under the skin and inside the cavity for maximum flavor.

Prepare the Smoker
Preheat your smoker to 250°F (120°C) using your choice of wood chips for flavor (hickory or applewood works great).

Smoke the Chicken
Place the chicken in the smoker and cook for approximately 4-5 hours, or until the internal temperature reaches 165°F (74°C).

Rest the Chicken
Once cooked, remove the chicken from the smoker and let it rest for 15-20 minutes before carving. This helps retain the juices.
