Brisket Preparation

Prepare the Brisket
Start by trimming excess fat from the brisket, leaving about 1/4 inch for moisture. Rub the brisket evenly with salt, black pepper, garlic powder, and onion powder. Make sure to coat all sides.

Season the Brisket
Wrap the seasoned brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate.
Smoking the Brisket

Preheat the Smoker
Preheat your smoker to 225°F (107°C). Add the wood chips to the smoker box or directly onto the coals.

Smoke the Brisket
Place the brisket on the smoker, fat side up, and smoke for about 6 hours, or until it reaches an internal temperature of 190°F (88°C).

Make the Sauce
In a bowl, mix together the barbecue sauce, brown sugar, honey, Worcestershire sauce, and apple cider vinegar. Stir until well combined.

Cut and Sauce the Brisket
Once the brisket is done smoking, remove it from the smoker and let it rest for at least 30 minutes. Then, cut the brisket into 1-inch cubes.

Coat with Sauce
Toss the brisket cubes in the prepared sauce until well coated. Place the sauced cubes back onto the smoker for an additional 1-2 hours at 250°F (121°C).
