Prepare the Brisket

Start by trimming any excess fat from the brisket. Rinse the brisket under cold water and pat it dry with paper towels.

Season the Brisket

In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub this spice mixture all over the brisket, ensuring it is evenly coated.

Smoke the Brisket

Preheat your smoker to 225°F (107°C). Once preheated, place the seasoned brisket in the smoker. Smoke the brisket for approximately 1.5 to 2 hours per pound, or until it reaches an internal temperature of 195°F (90°C) for tender slices.

Rest the Brisket

Once the brisket has reached the desired temperature, remove it from the smoker and let it rest for at least 30 minutes. This allows the juices to redistribute and makes for a more tender cut.
