Preparation of Brisket

Season the Brisket
In a small bowl, mix together the smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture all over the beef brisket, ensuring an even coating.

Sear the Brisket
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the brisket and sear it for about 3-4 minutes on each side until a nice brown crust forms.

Smoke the Brisket
Transfer the seared brisket to a smoker preheated to 225°F (107°C). Smoke the brisket for approximately 4-6 hours, or until it reaches an internal temperature of 195°F (90°C).

Rest the Brisket
Once cooked, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.

Slice and Serve
After resting, slice the brisket against the grain into thin slices. Drizzle with barbecue sauce before serving.
