Preparing the Beans

    Soak the Beans

    Rinse the dried navy beans under cold water. Place them in a large bowl and cover with 6 cups of water. Let them soak overnight or for at least 8 hours.

    Cook the Beans

    Drain the soaked beans, then transfer them to a pot. Add fresh water to cover the beans by about 2 inches. Bring to a boil, then reduce the heat and simmer for about 1 hour or until the beans are tender. Drain and set aside.

Cooking the Bacon and Aromatics

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon and let it cool on a paper towel-lined plate, then chop into small pieces.

    Sauté the Aromatics

    In the same skillet, add the chopped onion and sauté for about 5 minutes or until translucent. Add minced garlic and cook for an additional minute until fragrant.

Making the Sauce

    Combine Sauce Ingredients

    In a mixing bowl, combine brown sugar, ketchup, mustard, apple cider vinegar, salt, and black pepper. Mix well until fully combined.

    Combine All Ingredients

    In a large baking dish, combine cooked beans, sautéed onions and garlic, chopped bacon, and the sauce mixture. Stir well to ensure everything is evenly coated.

    Bake the Beans

    Preheat your oven to 350°F (175°C). Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes to caramelize the top.
