Pie Crust

Prepare the Pie Crust
In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Add Ice Water
Stir in the ice water, a tablespoon at a time, until the mixture comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.

Prepare the Apples
In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, flour, and vanilla extract. Toss to coat the apples evenly.
Assembling the Pie

Roll Out Dough
Preheat your oven to 425°F (220°C). Roll out one disc of pie dough on a floured surface to fit your pie dish. Place the dough into the dish and fill it with the apple mixture.

Top the Pie
Roll out the second disc of dough and place it over the filled pie. Crimp the edges to seal. Cut slits in the top to allow steam to escape.

Brush and Sprinkle
Brush the top crust with milk and sprinkle with granulated sugar.

Bake the Pie
Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the edges brown too quickly, cover them with foil.

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before slicing.
