Prepare the Meatballs
In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic, chopped onion, salt, pepper, and cilantro. Mix well until fully combined.
Form Meatballs
Shape the mixture into small meatballs, about 2.5 cm in diameter. Place them on a tray.
Cook Meatballs
In a large skillet, heat vegetable oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove from skillet and set aside.
Make the Korma Sauce
In the same skillet, add ginger, curry powder, and tomato paste. Stir for 1-2 minutes until fragrant.
Combine Sauce and Meatballs
Pour in the coconut milk and water, stirring to combine. Add the cooked meatballs back into the skillet. Simmer for 15-20 minutes, until meatballs are cooked through and sauce has thickened.
Serve
Serve the meatballs and korma sauce over your choice of signature rice.
