Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water and knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling

In a pot, boil the cubed potatoes until tender. Drain and mash them in a bowl. Add the chopped onion, minced garlic, chopped green onion, crumbled cheese, black pepper, and cumin to the mashed potatoes. Mix well.

Assemble the Bolani

Divide the dough into equal portions. Roll out each portion into a thin circle. Place a generous amount of the potato filling on one half of the circle, then fold the other half over to create a half-moon shape. Press the edges to seal.

Cook the Bolani

Heat olive oil in a skillet over medium heat. Cook each bolani for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with the remaining dough and filling.

Serve

Serve hot, optionally with yogurt or chutney on the side.
