Falafel Preparation

Soak Chickpeas

Place the dried chickpeas in a bowl and cover them with water. Allow them to soak overnight or for at least 8 hours.

Prepare Mixture

Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, black pepper, and olive oil. Blend until the mixture is coarsely ground.

Form Patties

Transfer the mixture to a bowl and add water as needed to help bind the mixture. Form into small balls or patties, about 1.5 inches in diameter.

Cook Falafel

Heat oil in a deep pan or skillet over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels.

Serve

Serve the falafel on a plate with your choice of fries, in a sandwich, over rice, or on a Greek salad.
