Directions for Preparing Dahl on Rice
Cook the Rice
Rinse the basmati rice under cold water until the water runs clear. In a pot, combine 1 cup of rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Prepare the Dahl
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent. Add minced garlic and grated ginger, cooking for another minute until fragrant.
Add Spices
Stir in turmeric, cumin seeds, and coriander powder, cooking for an additional 2 minutes until the spices are fragrant.
Cook the Lentils
Add the red lentils and vegetable broth (or water) to the pot. Bring to a boil, then reduce heat and simmer uncovered for about 20-25 minutes, stirring occasionally, until the lentils are soft and the mixture thickens. Season with salt and black pepper to taste.
