Cooking Instructions

1

Prepare the Vegetables

Chop the red bell pepper, celery, carrot, and onion into small, even pieces.

2

Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped vegetables and sauté until they are soft, about 5-7 minutes.

3

Add Beyond Meat and Pea Protein

Add the Beyond Meat and pea protein to the skillet. Stir well and cook for another 5 minutes until heated through.

4

Deglaze with Wine

Pour in the Pinot Noir, stirring to deglaze the skillet. Let it simmer for about 3 minutes.

5

Incorporate Marinara Sauce

Add the housemade marinara sauce to the skillet. Stir to combine and let it simmer for 10-15 minutes, allowing the flavors to meld.

6

Season the Sauce

Season the sauce with salt and black pepper to taste.

7

Serve the Dish

Serve the veggie bolognese over your choice of udon, jasmine rice, or ramen. Drizzle with remaining olive oil and garnish with chopped scallion and Thai basil.
