Make the Scallion Pancake Dough

In a large bowl, mix the all-purpose flour and salt. Gradually add boiling water and stir until a shaggy dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Scallion Filling

After resting, divide the dough into two equal pieces. Roll one piece into a thin circle. Brush with vegetable oil and sprinkle with chopped scallions. Roll it up like a jelly roll, then coil it into a spiral. Flatten it gently with your palm and roll it out again into a 9-inch circle.

Cook the Scallion Pancake

Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Cook the rolled-out pancake for about 3-4 minutes on each side until golden brown and crispy. Remove from the skillet and set aside. Repeat with the second piece of dough.

Assemble the Pizza

Spread the veggie bolognese sauce evenly over the cooked scallion pancake. Sprinkle cheddar cheese (or nutritional yeast) on top.

Final Cooking

Return the assembled pizza to the skillet and cover. Cook on low heat for about 5-7 minutes until the cheese melts. Alternatively, you can place it under a broiler for 2-3 minutes.

Garnish and Serve

Once the cheese has melted, remove from heat. Garnish with chopped Thai basil and additional scallions. Cut into slices and serve warm.
