Directions for Making Sasparilla Soda

Prepare the Sarsaparilla Infusion

In a medium saucepan, combine the sarsaparilla root and water. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 20 minutes.

Add Flavorings

After 20 minutes, add the brown sugar, vanilla extract, star anise, and cinnamon stick to the saucepan. Stir well and let it simmer for an additional 10 minutes.

Strain the Mixture

Remove the saucepan from heat and strain the mixture through a fine mesh sieve into a large bowl or pitcher, discarding the solids.

Chill the Syrup

Allow the sarsaparilla syrup to cool to room temperature, then refrigerate it until chilled.

Mix with Carbonated Water

In a glass, mix 1 part chilled sarsaparilla syrup with 2 parts carbonated water. Adjust the ratio to taste.

Serve

Fill a glass with ice cubes and pour the sarsaparilla soda over the ice. Enjoy your homemade Taiwanese root beer!
