Prepare the Eggs

In a pot, bring water to a boil. Gently add the organic medium eggs and boil for 6-7 minutes for medium soft-boiled eggs. Adjust time for desired doneness.

Ice Bath

Transfer the boiled eggs to an ice bath for 5 minutes to stop the cooking process. Once cooled, peel the eggs carefully.

Make the Marinade

In a saucepan, combine water, jasmine tea leaves, organic soy sauce, organic sugar, fresh ginger, and star anise. Bring to a boil, then reduce heat and let it simmer for 10 minutes.

Marinate the Eggs

Remove the tea marinade from the heat and let it cool slightly. Place the peeled eggs in a container and pour the marinade over them. Ensure the eggs are fully submerged, cover, and refrigerate for at least 4 hours or overnight for best flavor.

Serve

Remove the eggs from the marinade, slice in half, and serve. Optionally, sprinkle with salt to taste.
