Dumplings Preparation
Cook the Pasta
Bring a large pot of salted water to a boil. Cook the cavatappi pasta according to package instructions until al dente. Drain and set aside to cool.
Prepare the Cheese Filling
In a large bowl, combine the Piave Vecchio, Gruyere, and Cheddar cheeses. Add the cooked pasta, egg, salt, and pepper. Mix until well combined.
Form the Dumplings
Take small portions of the cheese and pasta mixture and hand-fold them into dumpling shapes or use a mold if available. Ensure they are sealed properly.
Boil the Dumplings
Bring a pot of salted water to a gentle boil. Carefully drop the dumplings into the water and cook for about 5-7 minutes, or until they float to the surface.
Drain and Serve
Once cooked, remove the dumplings with a slotted spoon and transfer to a serving plate. Serve warm with the dipping sauce.
